Ingredients:
- 1 Tbsp chopped onion
- 1 Tbsp chopped green bell pepper
- 1 Tbsp chopped tomatoes + more tomatoes for garnish
- 1 egg, beaten
- 2 egg whites, beaten
- ½ tsp Italian seasoning
- 1 tsp grated Parmesan cheese
Method:
- ADD onions and peppers, Cook for about 2 minutes then add tomatoes and cook until they start to soften.
- Now ADD the egg and egg whites. Sprinkle some seasoning. And cook until the eggs are cooked through.
- In the end SPRINKLE with the grated Parmesan cheese and then using a spatula fold the omelet into the half.

- 2¼ c water
- ¾ c steel cut oats
- ⅛ tsp salt
- 1 lg tart cooking apple (8 oz), cored and chopped

- 3 Tbsp honey
- 1 tsp pumpkin pie spice
- ½ tsp ground ginger
- 1% milk (optional)
Method:
- Boil the water and stir oats and salt for about 15 minutes while stirring occasionally.
- After that, you have to stir in apples, dates, honey, ginger and other ingredients and cook them until the oats are tender.
- Add milk if you want to add.
Strawberry-Kiwi Smoothie
Ingredients:
- 1¼ c cold apple juice
- 1 ripe banana, sliced
- 1 kiwifruit, sliced
- 5 frozen strawberries
- 1½ tsp honey
Method:
- COMBINE all the ingredients in a blender. Blend until smooth and serve in a tall glass.
Green Tea, Blueberry, and Banana Smoothie
Ingredients:
- 3 Tbsp water
- 1 green tea bag
- 2 tsp honey
- 1½ c frozen blueberries
- ½ med banana
- ¾ c calcium fortified light vanilla soy milk
Method:
- MICROWAVE some water on high and add tea bag and brew for about 3 minutes. Remove the tea bag from the cup and add and stir honey till it dissolves.
- After that, COMBINE all the berries, banana, and milk into the blender.
- One mixed thoroughly, ADD tea. Blend all these ingredients until smooth. Pour into tall glass and serve.
Whole Grain Cereal and a Banana
Ingredients:
- ¾ c whole grain flakes cereal
- 1 small banana, sliced
- 2 tsp chopped walnuts
- 1 c fat-free milk
- 3 Oz cooked turkey breakfast sausage
Method:
- COMBINE all the ingredients in a bowl and serve with cooked turkey breakfast sausage.
